Is there a way to set colors or font size for the special chars like EOL?

You can set color for white space chars in each highlighter. You can't set font.

Excuse me, but I cannot find this option. Where can I set colors for the space char for the TEXT or default file format?

Settings / Highlighter settings / Space (colors tab for each highlighter attribute)

Thank you, but how can I change TEXT or *.* file color scheme?

Text or file without highlighter file has no attributes and possibility to change it.
You can create new user highlighter and fill *.txt as file mask only. Then you will be able to set up space attribute.
