I'm using PSPad version 4.5.8 (2500) for Windows, and I'd love to use a more readable font, but when I go to change font settings, there are only a few available for me to choose from:
Courier
Courier New
Fixedsys
Lucida Console
Terminal
Is there a way for me to allow PSPad to use a font other than these 5?

PSPad uses nonproportional fonts. It will offer you any nonproportional font you will add into system.

As Jan said, you can only use monospaced system fonts.
Here are some suggestions I tried and liked:
- Cousine-Regular.ttf
- DejaVuSansMono.ttf
- FiraMono-Regular.ttf
Actually I ended up using Microsofts Consolas font (included in Win Vista+).

As an addition to this - Inconsolata regular at 12 points is really nice in PSPad.
