I think that "Ident. Bytes in UTF-8 coding" should be added to Format menu and to status bar (option should be used only for defaults, ie new files). Also add "BOM" to the label.
What do you think?

Yes, on the format menu it would be a good idea to have the following options.
"UTF-8 (with BOM)"
"UTF-8 (without BOM)"
Yes, the status bar could use the same strings.
